Here's something we did last year for Pre-school (yup just getting around to blogging it now!)
I just took an egg carton, and numbered each section, then let little L count some dried beans into each one.
Hard to believe he is in Kindergarten now! :(

We hot glued some magnets to the back, aren't they the cutest little Jedis, princesses and aliens you have ever seen!!? :)

I know today is Tuesday, but I just couldn't wait to share these little guys with you! :)
The kids and I made these adorable little Star Wars characters for my sisters, for Christmas (we gave gifts early this year, when we visited them) So now I can share the pattern with your! My inspiration came from a pin on Pineterst. We also created a few more of our own characters (I think the original only had 5-6 characters). You can down load my printable chart HERE.

Make it Monday
Ingredients:
1/2 c coconut Oil
3/4 c brown sugar or sucanat
2 eggs
1 1/2 c flour
1/4 c cocoa
1 t salt
1 t baking powder
1/4 t baking soda
1T vanilla
1 c chocolate chips or chunks ( we used chopped up chocolate easter eggs)
Cream coconut oil and sugar until well blended. Mix in eggs and vanilla, blend well. In separate bowl mix dry ingredients, then add to wet ingredients. Blend and then stir in chocolate chunks by hand.
Don't forget to lick the spoon! Bake at 375 F for 8-10 minutes and let cool on the pan for a few minutes before you remove them.

It was a rainy day and in this house we bake on rainy days. Buuuut, sadly I was out of butter! What to do! I had a ginormous jar of coconut oil in the pantry and I figured I could try to substitute that in place of the butter! Let me tell you, it was DELICIOUS! Almost better than butter.... almost!
Ingredients:
1/2 c coconut Oil

- i package gelatine
- 2 T corn syrup
- 1/2 c flour
- 1 C water
- containers or cookie cutters for molds
Combine the water, flour, gelatine and corn syrup in a large bowl. Stir in bird seed and mix well.
Spray your molds with cooking spray so the seed mixture doesn't stick
Scoop the mixture into your molds and press it down firmly.

Mac and Cheese is one of those great comfort foods, that warms your insides on a cold day! The benefits to making your own from scratch are that you can avoid the sodium and preservatives that the boxed brands have. You can also glam it up a bit by using different types of cheeses for different flavors. This recipe is the bare minimum technique for making a creamy mac and cheese sauce.
Ingredients:
1 lb macaroni (elbows or penne works)
2 cups grated cheese (sharp cheddar for traditional, you can use any flavor you like).
1/4 grated Parmesan cheese
2 c milk (whole makes it creamy)
2 T butter
2 T flour
Recipe:
Fill large pot with water and prepare pasta, to a little under done about 6-7 minutes. (*if you aren't going to bake the pasta at the end you can prepare the pasta to done, about 10 minutes).
In a small sauce pan, melt the butter over medium high heat. With a fork or whisk mix in the flour. Let this cook for about 2 minutes, this is called a roux and it will thicken your sauce.
Here is the most important part, TURN OFF THE HEAT before you stir in your milk (it will curdle... :P). pour in two cups of milk, stirring the whole time. Turn the heat back on to medium, stirring frequently until it starts to thicken. Once the sauce begins to thicken add the cheese and keep stirring. Once all the cheese is melted your sauce is done.
Drain the pasta and pour the sauce over. Place in a greased 13x9 inch pan. You can add more grated cheese on top, or bread crumbs for a little crunch.
Bake for about 15 minutes at 375F or until your cheese on top is brown and bubbly!
This recipe is so versatile you can add all kinds of extras to make it your own.

Make It Monday: Creamy Chicken and Peppers

I've been on a "sugar diet" during the week and the other day I wanted something to indulge in. I searched around for something I could make with the chicken I had taken out for supper. This recipe is so yummy and creamy and a great dinner indulgence.
Ingredients:
- 3-4 boneless skinless chicken breast
- 1 T Italian seasoning
- 1 large onion chopped
- 2 bell peppers (red, yellow or orange)
- 2-3 cloves of garlic chopped
- salt and pepper
- 1 can diced tomatoes
- 6-8 oz. cream cheese
- Parmesan cheese
- grated mozzarella for topping
- 2 T olive oil for cooking chicken
Pre heat oven to 375F. Heat 1T olive oil in a skillet and brown the chicken on both sides, do not cook all the way through. Place chicken in a glass dish. Add 1T olive oil and saute onions, then add peppers and garlic. saute until slightly soft. Place over the chicken. In the same pan pour in the tomatoes and add cream cheese, warm until the cheese is melted. if your sauce seems a little thick add some chicken stock. Sprinkle chicken with seasoning, then pour sauce over top. Sprinkle with Parmesan cheese and mozzarella and bake for about 1 hour covered. Near the end remove covering and let cheese brown and bubble. This is great served with rice, or even over pasta, YUM!
